The third type of carbohydrate is fiber. Fiber is a complex carbohydrate, but doesn’t act like either simple or complex carbs. The human body can’t fully digest fiber therefore it is not broken down into sugars in the digestive system. Fiber does do good things for your body though. It regulates blood glucose levels, lowers cholesterol levels, and promotes regular digestion and excretion of waste. Whole grains and fruits and vegetables all carry much fiber and are considered healthy. The picture above is of peas which are fiber-rich as are lentils and dry beans.
